Gazpacho Tapas Recipe
Ingredients:
4 ripe tomatoes, diced
1 cucumber, peeled and diced
1 red bell pepper, diced
1 small red onion, finely chopped
2 cloves garlic, minced
4 cups tomato juice
1/4 cup olive oil
2 tablespoons red wine vinegar
Salt and pepper to taste
Fresh basil or parsley for garnish

Instructions:
1. In a blender or food processor, combine diced tomatoes, cucumber, red bell pepper, red onion, and minced garlic.

2. Pulse the ingredients until coarsely chopped. If you prefer a smoother texture, blend for a few more seconds.

3. Pour the mixture into a large bowl and add tomato juice, olive oil, and red wine vinegar. Mix well to combine.

4. Season the gazpacho with salt and pepper to taste. Adjust the seasoning according to your preference.

5. Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld and the soup to chill.

6. Before serving, stir the gazpacho and adjust the consistency with more tomato juice if needed.

7. Ladle the chilled gazpacho into small tapas bowls or shot glasses. Garnish with fresh basil or parsley.
